Baked Brie & Mixed Berries

Ingredients

  •  300g brie cheese (use camembert if not available)
BERRY SAUCE:
  • 1 cup sugar
  • ¼ cup water
  •  200g frozen berries
  •  3 sprigs fresh thyme (place on board & bruise with the back of a wooden spoon to release the aromas)
  • 1 orange (juice & rind)
  •  salt & ½ tsp cracked black pepper

Execution

  • pre-heat the oven to 180°C
  • place the brie onto the baking paper & spoon the berries over. Partially close the paper
  • bake for approximately 10’ or until soft. Serve immediately

Execution for berry sauce

  • place all the sauce ingredients – except the berries – into a pot & allow to simmer for 10
  • remove from heat & add berries. Allow to draw & cool.

Notes:
The sauce can be made up to 3 days earlier & kept refrigerated // This is an ideal dish to make into smaller portions & serve as an individual starter with hot bread or cracker
